Ingredients:
Beef Roast, cubed 
Onion (if desired)
3-4 Potatoes
Squash
Parmesan Cheese
Garlic
Butter/Margarine
Salt and Pepper
Directions: Brown cubed beef and onion in a skillet with a little butter. When cooked, remove from heat, or cook the potatoes in a separate skillet at the same time. Melt butter in skillet, add thinly sliced potatoes. Mix in seasonings (not parmesan). Cook, covered for 8-10 mins. Then cook, uncovered, for another 8-10 mins. flipping the potatoes so they are browned on all sides. Towards the end sprinkle with parmesan cheese and continue browning. In a separate pan or the same one as the original beef pan, melt a little butter and brown sliced squash.

Notes: You can use zucchini instead of squash.

Cooking Tip: You could also use olive oil instead of butter or margarine.

Time Saving Tip: It helps to have 3 different pans or skillets and try to do all three things at once, but if you don't just cook the meat ahead and add it at the end to warm it back up.
